Made and ready in the fridge this egg (less) salad has saved the day many a day
Make a bunch and it’ll be there when you are running in or out the door…

Recipe: Tofu “Egg” Salad
Ingredients
1 lb firm reduced fat tofu – drained and crumbled
2 scallions – sliced very thin
1/3 cup fresh cilantro leaves or fresh parsley – finely chopped
1 stalk celery – chopped
1 medium dill pickle – chopped
2 tablespoons dill pickle juice from jar
1/2 teaspoon lemon juice
1 teaspoon seasoned salt
1 teaspoon black pepper
1/2 teaspoon turmeric (adds color)
1 tablespoon prepared mustard
1/4 cup non-fat mayonnaise
Steps
1. Combine all ingredients in a mixing bowl.
2. Adjust seasonings to taste.
