Susan Powter’s Cranberry Walnut Cookies
A high quality cookie if there ever was one and, there is. Nothing complicated about it and, fabulous.
10 min prep / 20 min cooking / 12 cookies
3 c White Spelt Flour
½ c Cane Sugar
½ c Cranberries, dried
½ c Walnuts, shelled and chopped
½ c Orange zest
½ c Sunflower Oil
¼ c Maple Syrup
½ tbl Cinnamon, ground
1 tsp Baking soda
1 tsp Salt
Sift together flour, salt, baking soda and cinnamon.
Mix together oil, maple syrup, cane sugar and orange zest.
Fold wet mix in to dry mix. Fold cranberries and walnuts in to dough.
Scoop on to a lined sheet pan and flatten dough with the palm of your hand.
Bake at 350 for about 20 minutes, until done.
Cool for a few minutes and enjoy.
