Spinach Salad, and Dressings… 02/08/2008 | by Susan Powter Filed under: | Two for one because, you asked.
Salad dressing you say, well when it’s this simple to make and this good (that applies to both)
There’s never a need to buy it.

Make up a bunch because besides this lovely Spinach Salad
These dressings dress everything up beautifully.

Recipe: Spinach Salad / Sweet and Sour Dressing / Balsamic Vinegar Dressing

Spinach Salad

1 1/2 lb spinach, washed and stemmed
4 hard cooked egg whites, sliced
4 slices of soy bacon, cooked and crumbled


Sweet and Sour Dressing

2 cloves garlic, minced
1 tbsp honey
1/2 cup seasoned rice vinegar
1/2 cup rice wine (Mirin)
1 tsp Dijon mustard
1 tsp Spike seasoning

Combine all ingredients in a blender.
Use on spinach salad or as a topping for steamed veggies…


Balsamic Vinegar Dressing

8 tbsp water
2 cups balsamic vinegar
4 tbsp Dijon mustard (any fat free version)
8 tbsp lemon juice
4 cloves garlic, crushed
2 tsp salt
2 tsp oregano (dry)
Black pepper to taste
2 tsp sugar
2 tbsp parsley, chopped

Mix all ingredients together in a jar and shake vigorously.
Terrific for grilling, roasting, marinating or over salad…

Susan Powter (born 22 December 1957) is an Australian-born American motivational speaker, nutritionist, personal trainer, and author, who rose to fame in the 1990s with her catchphrase "Stop the Insanity!", the centerpiece of her weight-loss infomercial. She hosted her own talk show The Susan Powter Show in the 1990s.
